The Solis&Cordero Micromill, founded in 2018 by the Solis Cordero family, is dedicated to supporting smallholder farmers in the Santos region. They provide a range of services including cherry processing, specialty coffee sales, roasted coffee sales in Costa Rica, quality control consulting, and export services. They work with smallholder farmers to differentiate their coffee through farm-level traceability and innovative, quality-focused processing methods.
Roger and his family carefully handpick ripe, red cherry and deliver it to the Solis&Cordero Micromill for processing. At intake, the cherry is inspected and then fermented in whole cherry for 48 hours. After fermentation, the cherry is pulped and the parchment and remaining mucilage is transferred to raised drying beds. The parchment is raked frequently to ensure even drying, and it takes approximately 16 days for the parchment to fully dry.
