Using only very ripe cherries, the pulp is removed and along with added mucilage of the same crop, placed in a tightly sealed tank. A temperature controlled fermentation lasts between 18-23 hrs. The CO2 that occurs applies high pressure on the grains exerting distinct flavours. A well processed anaerobic coffee such as this produces an aromatic, sweet, unique cup packed with cinnamon and spice.
