Every producer has their ‘recipe’ for natural process, but every great natural starts with great quality cherries. This lot consists of only the very ripest cherries from multiple days picking. They are sorted & spread out in a single layer for the first 2 days to dry faster, limiting maceration, then building up the layers to slow the drying. This creates a clean & bright profile which reminds us of those sweet & floral Ethiopian naturals and we cant get enough of it!

To discover these flavour profiles we recommend to use soft mineral water with a low HCO3 (bicarbonate) & aim for total hardness of less than 140 mg/l.
