Ombligon, also known as Papayo is originally thought to be a Caturra mutation, however recent genetic testing showed a close relationship with Ethiopian landraces. The coffee cherry first goes through a 12hr aerobic (with air) fermentation. After depulping it is fermented  in water, in open tanks for 40hrs, mixed frequently & temperature controlled, then washed and dried in marquesinas for 40hrs. Delicate & complex we found it sweet like agave with subtle floral notes of Gesha.
