The Inmaculada Fellows’ Program was created in 2022 to help traditional coffee farmers in Colombia who don’t have the means to cope with the ongoing climatological changes and their respective financial implications. La Inmaculada helps them through improving their (post-)harvest practices and infrastructure, which generates more income and international visibility for the farmers. This financial buffer is important for farmers in coffee-producing countries, as the next harvest is always unpredictable. La Inmaculada also pays a bonus for high-quality cherries and in doing so pushes the farmers to pick only the ripest cherries and process them with the utmost care, which inevitably leads to a better product overall. After picking, cherries are floated to sort out the remaining defects and fermented anaerobically. Afterwards they are depulped and laid out to dry in sun-heated greenhouses for 15 days, with the mucilage left on and raked frequently to ensure an even drying process.
