Miller Benavides and his wife have been succesfully running Finca Los Nogales for 15 years now. The farm spans two hectares at a height of 1650 masl in Salado Blanco, Huila, where harvest takes place from October until January and during which time they're five to pick and process the cherries, Amongst them is their eldest daughter, who's currently studying agricultural sciences as a main occupation with the idea of one day taking over her parents' farm. Under her's and Miller's careful watch, the ripe cherries are picked, then rested before pulping - exactly how long depends on whether it's sunny or rainy weather -  and then fermented for up to 3 days in an empty tank. Finally, the beans are fully washed and dried in a polyshade for a maximum of 8 days.
