This is our 2nd coffee from Las Lajas who we visited earlier this year. The honeys are sun dried on beds for the first few days and moved depending on the honey colour desired. The longer the drying and the thicker the layer, the darker the honey. This black honey is not moved at all for the first 2 days after pulping. As they move to patios, they flip the crust formed rather than creating rows. Just like our Yellow Diamond this coffee is very fruit driven & this time more rounded.
