This is the 2nd year we got our hands on this amazing coffee, it was the first Ethiopian anaerobic we tried and it completely blew us away. Last year we released this coffee as WHITE LABEL, this year we were able to buy more! As alternative processing methods are being used more often now in Ethiopia to push standards and profiles, this true 90+ coffee can feature in our single origins. This lot is a great example of how processing can add complexity. Expect a very floral cup with notes of wild berries & cotton candy.

Brewing

To discover these flavour profiles we recommend to use soft mineral water with a low HCO3 (bicarbonate) & aim for total hardness of less than 140 mg/l.
