Until 3yrs ago Ethiopian coffees were mainly traded through the Ethiopia Commodity Exchange. Here coffees were brought in as regional blends and auctioned off to the highest bidder. The change in law has meant there is less bulk blending & in turn new taste profiles are being discovered. Diima refers to our importers categorisations that are helping to define & navigate through this exciting time. A typical Diima coffee will be natural process, bursting with sweet ripened fruit & balanced with complex floral notes!
