Only fully ripe cherries are picked for this process, they are tightly packed in sacks & sealed shut where they ferment anaerobically (without oxygen) for 18-24 hrs. The seal means the oxygen fuelled microbes quickly consume all oxygen, allowing carbon dioxide fed microbes to dominate the fermentation, resulting in alternative flavour notes. This natural process is then laid to dry in direct sunlight on raised beds. This is an incredibly complex & expressive cup with all the elegance of an Ethiopia.
