Finca Cruzpata lies in Puno, a region in the south of Peru that is most famous for Lake Titicaca. The lake lies at an altitude of 4000 masl and is surrounded by fertile soil, creating the perfect circumstances for coffee growing. Finca Cruzpata is a 3 hectare farm that lies at 1950 masl and is owned by Aureliano Mamani Salas. He chooses to focus mainly on processing high quality varieties on his farm. These varieties typically have lower yields, meaning quality over quantity. This way, Aureliano can invest more time in processing the coffee. For this Geisha, the cherries are handpicked when fully ripe, washed and pulped with a little mucilage left on. Then, parchment is placed inside GrainPro bags and stored away from light to ferment for 36 hours. Afterwards, parchment is washed again to remove the remaining mucilage and the parchment is dried on raised on beds for about fifteen days.
