On the outskirts of the Cusco jungle, at around 1750 to 2000 masl, lies 
Finca La Margarita, a 3 hectare coffee reserve run by the Melgarejo family. 
Everything here happens organically. The manure is homemade - a secret 
recipe that we know but swore not to share! Roaster Paulien visited the farm 
in january 2024 where she met the whole family and saw the trees that grew 
this outstanding ‘supernatural’ microlot. The cherries, carefully picked when 
ripe are immediately put in tanks for 10 days where they are left to ferment 
anaerobically. Then, they are moved to drying beds in the shade where they 
are slow-dried with fans for 25 days. On the 15th day, the cherries, still on 
drying beds, are put in grainpro bags to intensify and aid the development 
and transportation of flavours from cascara to coffee bean, i.e. to really trap 
all flavours inside the beans.

NotesA sweet cup of coffee with notes of blueberry, vanilla and caramel that reminds us of crème brûlée, with a fresh lemon acidity and a chocolate finish.



To discover these flavour profiles we recommend to use soft mineral water with a low HCO3 (bicarbonate) & aim for total hardness of less than 140 mg/l.
