Wuyishan region is famous for its tea. This style relies heavily on the skill of the tea maker, the leaves are plucked and then carefully withered under the sun during the cooler morning hours and gently turned regularly to encourage complexity of flavour. The tea is then partially oxidised and gently roasted four times over aromatic charcoal.
