Another infused coffee from Bryan Alvaer, especially released to accompany our article in KTC magazine! From a young age, Brayan soaked up coffee wisdom like a sponge, thanks to his dad’s after-school lessons. Little did he know, those coffee chats would ignite a fire within him. Now Brayan is known for his super expressive and natural infused coffees. For the Juicy Passion, he started with a pre-fermentation: the berries go into a plastic bag for 24 hours, followed by a 24-hour cherry aerobics session. This is followed by depulping and a 5-day anaerobic fermentation with dehydrated passion fruit. Finally, there is a 10-day mechanical drying process. The result is as stunning as the previously released “Juicy Berries”, only this time in an even more exotic profile with top notes of Passion fruit.
