Colombia, Cata, Washed
We're happy to finally release this Pink Bourbon from Catalina Gutierrez! Catalina from CATA Export visited us in July and surprised us with her very first self-produced coffee. She and Pierre bought 30 hectares of land in Timana, Colombia, at 2000 masl. The plant formerly belonged to Rodrigo Cortès who's coffee she exported until he retired. Catalina and Pierre jumped to the occasion, attracted by their shared passion for cultivation with correct soil treatment. 15 hectares of the farm are dedicated to forest - a natural reserve - while the other 15 hectares are used for traditional cultivation. Only 7 of these hectares are currently in use, as the other are being reseeded. It is here that this Pink Bourbon is grown. Only "beginning", all coffee still has the same standard processing procedure. The cherries go through a 48-hour oxidation, are then pulped and laid out to dry until the desired humidity is reached. For this specific lot, no bacteria were used to treat the beans after pulping.
For years, Catalina and Pierre from CATA have been working to promote and market small producers from Colombia who otherwise have limited access to resources. MOK and CATA met at the London Coffee Festival five years ago and that makes the release of this coffee extra special. Cata has been responsible for 80% of our Colombian coffee supply since then!
