Pepe Jijon’s youngest coffee project Fincas del Putushio which he runs alongside his son Jose is located in Loja, southern Ecuador. With their year-long experience at Finca Soledad, Pepe’s first and acclaimed farm, they successfully initiated this new operation. Fincas del Putushio lies on a small plateau at 2222 masl in the Andes mountain range. The high altitude, the volcanic soil and the temperate mountain climate create an excellent, yet completely new growing environment for Pepe and Jose. This lot consists of 100 % Typica Mejorado and was sent to us on Pepe’s initiative. It was harvested and depulped on the same day, then washed with fresh spring water and slowly dried for 30 days on covered, raised beds on the premises. The processing is a collaboration between father and son.
