Ethiopia, Kelloo Danche, Washed
17.00 EUR
Danche, situated in Chelbesa, Gedeb, is a washing station that acquires cherries from 400 farmers. These farmers achieve impressive yields due to the fertile soil and effective farming methods employed.
Danche washing station only buys from farmers in the Chelbesa region (2000-2300 masl) who practice organic farming methods, as to promote maintenance of the above mentioned fertile red soil in this region. All cherries are hand-picked at the farms and collected at the washing station, where they are pulped upon arrival. The pulped beans then undergo a 72h wet fermentation, after which they are washed in channels and graded by density, eliminating floaters. Finally, the beans are left to dry in layers of 2cm thick for 10 days, hand-soarting one more time before bagging. Kello means yellow in Oromiffa and represents the taste profile of this coffee: yellow stonefruit and florals.
