“Sisterhood” refers to the all round presence and participation of women in the coffee supply chain and wishes to honour those women in particular who worked on the coffees that went into this blend. The largest part - about 80 % -of it is made up of washed varietals, being Bourbon, Caturra and Catuaí, and this is complemented with Natural and Honey processed Geisha and Caturra. The blend consists of ‘strictly hard beans’ only, or ‘SHB’, a grading system commonly used in Central America to indicate which coffee beans were grown higher than 1200 masl. and was carefully put together with high quality lots from various producers in Guatemala to ensure cup quality matches and exceeds consumers’ expectations. Once blended, all caffeine is removed with ethyl acetate (a harmless material derived from sugar cane) to not lose the beans’ character and dried on patios afterwards, until the desired humidity of 11 % is reached.
This coffee was sourced through our importing partner Coffee Bird, who work exclusively with producers from Guatemala.

Brewing
To discover these flavour profiles we recommend to use soft mineral water with a low HCO3 (bicarbonate) & aim for total hardness of less than 140 mg/l.
