This particular coffee lot was processed at the SNAP-owned Danche Washing Station in Worka Chelbesa, a Kebele (or small village), in the far south of Gedeo, a coffee growing region that is traditionally categorized as Yirgacheffe grown coffee.Coffee that is categorized as Yirgacheffe grown coffee is not necessarily grown in geographical Yirgacheffe, but shares certain qualities and cup profiles that are associated with it. Ethiopia knows seven such areas of which the most famous ones are Sidamo, Yirgacheffe, Limu and Guji. The Washing Station lies up in the hills and collects cherries from more than 600 smallholder farmers who grow coffee on plots that range from 0.5 to 2 hectares, between 1925 and 2300 masl. SNAP also ensures that producers’ farms are no more than 40 minutes away by car, to ensure practicality for them and cherry quality for the Washing Station. Cherries were picked when ripe and delivered to the Washing Station where they were depulped and fermented underwater for 24 - 36 hours, ensuring all mucilage had come off. Coffee was then thoroughly washed with clean spring water and separated twice, first by density and then by floating through soaking. Finally, the coffee was laid out to dry on raised beds until the desired humidity was reached.
