Finca Cedruyoc lies in a jungle area in the province of Cusco, on a hill above the town of Yanatile at around 1850 masl. The farm is 2.5 hectares large and the terrain is steep and quite rocky. While many producers would consider this a drawback, Juan José Huillca - an agricultural technician - discovered that this tough environment is beneficial for the sugar concentration in his cherries, resulting in sweeter cup profiles. His agricultural knowledge allows him to practice sustainable farming and to share these practices with farmers in the surroundings. An example of such practices is the liquid fertilizer (‘bioles’) he obtains through the anaerobic fermentation of organic waste. The jungle area being rather remote and not easily accessible, Finca Cedruyoc and others rely on cooperative Valle Inca to export their coffee. We visited Finca Cedruyoc in 2024.
