Ruben Correa is a coffee producer from Huila, Colombia. His farm La Primavera spans 3 hectares and lies at a height of 1430 masl, where he owns about 15000 coffee trees on which he grows the varieties Castillo and Papayo. This last one, Papayo, is a relatively rare variety because it only grows in Huila and it can be recognized by its oval and pointy (papaya-like) shape. It’s a direct descendant from Pink Bourbon and produces high yields with complex cup profiles, especially thriving between 1400 and 2000 masl. This Anaerobic Natural from Ruben Correa bursts with ripe red fruit flavours and chocolate. All cherries are handpicked, then floated to sort out the defects and the underripe ones. The remainder is fermented in GrainPro bags on the farm and finally brought to marquesinas, which are parabolic greenhouses wherein the coffee dries on raised, wooden beds to avoid all contact with floor or soil.
