The Muburi Factory is located in Kirinyaga County, a mountainous and heavily forested region in Central Kenya that is famed for its sweet coffee. It is owned and operated by Rwama Farmer Cooperative Society, which provides a correct and profitable payment for the farmers and which also acts as an intermediate between exporters (in this case Sucafina) and farmer, making sure that the latter receive both agronomical and climate support. This allows the farmers - typically smallholders of less than 1 hectare - a targeted agricultural approach. An example is a customized fertilizer, which can immediately result in improved cherry quality and yield. For this lot, cherry is handpicked when red and ripe and delivered to Muburi Factory, where they are visually sorted through floating. Then, the cherry is pulped and fermented for 12 to 24 hours, washed in clean water and soaked for another 24 hours. Finally, the parchment is laid to dry on raised - "African" - beds whilst raked frequently to ensure even drying. Twice a day the parchment is covered: at night, to protect it from moisture and during the hottest time of day, to maintain a slow drying process of approximately 7 to 14 days.
