Espresso A, Ethiopia
The Idido Washing station is based in Yirgacheffe and processes coffee from smallholder farmers in the nearby mountainous area. This lot is a Grade 2 from Ethiopia that was cultivated at around 1880 masl and then collected for washing at Idido. What makes Yirgacheffe coffee stand out from all other (even Ethiopian in general) origins, is that they are always so delicate, fruity and floral. This distinguished flavour profile is partially due to the high altitudes that force the coffee plants to work harder to produce ripe cherries. These cherries ripen a lot slower than at lower altitudes, giving them more time to absorb all the flavours the plant has to offer.
When looking for new coffees to drink at home, looking at the ‘meters above sea level’ where a coffee is grown is a good place to start. Many coffee producing countries will even label the coffee that is grown at higher altitudes more qualitative.
