First collaboration with Miller Bustos from Colombia who has been a coffee producer for more than 20 years. He started cultivating specialty coffee after about ten years in commodity coffee and this for both economical and ecological sustainability reasons. What made his switch bearable and productive is that he doesn't stand alone, from the very beginning he has been supported by Cuatro Vientos, an importing partner of Sucafina that works with specialty coffee producers in Huila. They are always on the lookout for the best possible quality in coffee and promising producers and offer training accommodation in various places in Huila. Here - and on their farms as well - producers can acquire aid and information on wet and dry processing, fertilizing etc. This particular lot from Miller Bustos is a Washed Tabi. Cherries are handpicked when ripe and immediately pulped afterwards. After pulping and a short fermentatation, the parchment is washed and laid on patios to dry in the sun.

To discover these flavour profiles we recommend to use soft mineral water with a low HCO3 (bicarbonate) & aim for total hardness of less than 140 mg/l.
